This frittata is extremely versatile. You can make it for breakfast, lunch, or dinner!

  1. Preheat oven to 360°F. Crumble feta cheese

  2. In a large mixing bowl beat eggs until fluffy. Add rice, feta cheese and cottage cheese and mix well, breaking up any clumps of rice.

  3. Add chopped olives, basil leaves, sweet pepper and zucchini

  4. Transfer frittata mixture to a lightly greased shallow ovenproof dish.

  5. Bake for 45 minutes.

  6. Remove from the oven and rest for 15 minutes before cutting.
