Italian Rice Salad
Method
In a small jar, mix the zest and juice of half a lemon, garlic cloves, Italian seasoning, and olive oil.
Loosen the rice out with a spoon or wet hands so that the rice grains are separated.
In a large bowl, mix leftover rice and the rest of the salad ingredients. Drizzle the dressing and mix thoroughly.
Serve with chopped fresh herbs like basil or parsley if desired.
