Sunwhite® White Medium-Grain Calrose Rice

Sunwhite® Calrose Rice is an oval medium-grain white rice known for its quality and taste. When cooked, Calrose rice becomes soft and tender with a tendency to stick together due to its succulent grains, allowing it to retain its moisture. Sunwhite® Calrose Rice is used in dishes that require a bit more creaminess as well as a side dish to compliment almost every meal. Its versatility means that it can be used in everything from starters and soups to desserts. For best results, rinse this rice with cold water. Drain well before cooking. Ingredients to serve:

  • 1 cup Sunwhite Basmati Long Grain Rice (rinsed and drained)

  • ½ kg Zucchini (cut into small pieces)

  • 250 g Beef (minced)

  • 4 tbsp Tomato Paste

  • 1 tsp Allspice (ground)

  • ½ tsp Cumin (ground)

  • ½ tsp Chili Pepper (ground)

  • ½ tsp Coriander (ground)

  • Salt And Pepper (to taste)

Medium Grain

White medium grain rice is a round, tender and succulent grain, allowing it to lock in moisture when it is cooked. This rice is often used in dishes that require a bit more creaminess, like paella or risotto. It is also ideal in your favourite Middle Eastern, Korean and Spanish dishes.

Method

  • In a bowl, mix the meat and rice well seasoning with the spices.

  • Remove the stalks of the zucchinis then core out the interior (use a spoon or a corer). Leave about 1 centimeter thickness on the inside.

  • Stuff each zucchini (by hand or spoon) with the meat and rice mixture. Try not to overstuff the zucchinis by leaving about 1 centimeter empty at the top of each piece as the stuffing expands while it cooks.

  • In a large saucepan, add 2 to 3 cups of water along with the tomato paste, seasoning it with salt and pepper and bring to a boil.

  • Reduce the heat, add the stuffed zucchini, and simmer for 55 minutes to 1 hour.

  • Serve hot with the sauce.
