Lentil Soup with Rice

Lentil soup is a wonderfully warming meal packed with protein and nutrients. A perfect vegetarian meal to fill you up.

Ingredients:

  • 1 Onion (finely chopped)

  • 3 tbsp Vegetable Oil

  • 1½ cup Crushed Red Lentils (crushed)

  • ½ cup Sunwhite Medium Grain Rice

  • 2 tsp Cumin

  • 1 tsp Turmeric

  • ¼ tsp Ground Cardamom

  • ¼ tsp Black Pepper

  • ¼ tsp Hot Red Pepper

  • 1 tsp Salt

  • 10 cup Beef Or Chicken Broth

Method

  • Wash rice and lentils, put them in a large saucepan, add water, and leave it on a high heat until it boils, then let it simmer over a low heat.

  • Meanwhile, put oil in a frying pan and add onions, salt, cumin, turmeric, cardamom, black and red pepper, stir the onion until wilted, then add it over the lentils and rice.

  • Stir the ingredients and let it boil for about five minutes, then put the soup in the electric blender and turn it on until the mixture becomes smooth.

Medium Grain

White medium grain rice is a round, tender and succulent grain, allowing it to lock in moisture when it is cooked. This rice is often used in dishes that require a bit more creaminess, like paella or risotto. It is also ideal in your favourite Middle Eastern, Korean and Spanish dishes.
