Mediterranean Chicken Rice

Mediterranean Chicken Rice is a traditional dish, full of flavour.

Method


  1. Wash the rice several times and let it soak in water for at least 30 minutes.

  2. Pour a large amount of water into a deep saucepan and add to it: bay leaf, cardamom, salt and oil.

  3. Put the pot on a medium heat and leave the ingredients until they boil well.

  4. Add the soaked rice and cook for about 10 minutes, then drain.

  5. Mix together the salt, black pepper, ground cardamom and cumin until all are mixed

  6. Put the chicken pieces in a bowl and season with half of the resulting mixture of spices.

  7. In a deep pan, heat the oil over a medium heat.

  8. Add the seasoned chicken pieces.

  9. Cook the chicken, for 10-12 minutes a side, until the outside is golden brown, then set aside.

  10. Put the onion wings in the same pan and stir until they wilt, then add the garlic, black pepper and tomatoes

  11. Mix the previous ingredients with the remaining amount of the spice mixture and stir until the flavors are well distributed.

  12. Pour the water into a pot, bring to a boil and let the vegetables cook for at least 5 minutes.

  13. Add the cooked Sunwhite rice to boil with the vegetables for a few minutes, stir well

  14. On a plate, place the seasoned rice and fried chicken on top.

  15. Add the parsley for decoration.
