Ingredients:

  • 1 tsp Olive Oil

  • 250 ml Water

  • 5 ml Pomegranate Molasses

  • 1 Onion (chopped)

  • 20 g Coriander

  • 500 g Tomatoes

  • 800 g Okra

  • 85 g Tomato Paste

  • 15 g Garlic

  • ½ tsp 7 Spices

  • 1 tsp Grounded Coriander

  • Salt And Pepper (to taste)

Method

  • Crank up the heat and get that olive oil sizzling!

  • Toss in some onion and garlic and let them sweat until they're crystal clear.

  • Pop in those gorgeous Okra (no need to chop) and give everything a good stir.

  • Add in some juicy tomato and keep stirring.

  • Close the lid and let it cook for approximately 7 minutes, giving those flavors time to mingle.

  • Add in all the other delicious ingredients and give it a good stir. Now, lower the heat to med-low and let it cook for another 20-25 minutes, checking in every 10 minutes or so.

  • When everything has softened, that's when you know the Okra is good to go.

  • Serve with vermicelli rice for the perfect pairing.

Medium Grain

White medium grain rice is a round, tender and succulent grain, allowing it to lock in moisture when it is cooked. This rice is often used in dishes that require a bit more creaminess, like paella or risotto. It is also ideal in your favourite Middle Eastern, Korean and Spanish dishes.
